Domaine de Cabasse

This winery is situated amidst vines between the towns of Séguret and Sablet, a half-hour drive from Orange, or Châteauneuf-du-Pape. The origins of the Domaine de Cabasse date back to when the Papal seat was in Avignon. Over time, the original Italian name Casa Bassa (the house below the village) became Cabasse.

In 1990, the Swiss Häni family acquired the domaine and worked continuously to establish the reputation it enjoys today. In 2012, the Baudry family bought the entire hotel and winery and continues to manage it with the same attention t…

Massena / Jaysen Collins

Dan Standish and Jaysen Collins were college friends, and in the late 1990s they decided to put their talents together to produce wine. Recently, Jaysen Collins has taken charge of the "Massena" project on his own.The grapes are purchased from growers in Greenock, Kalimna and Koonunga Hill in the northwest Barossa Valley.

They are always very old plots and the yields are naturally tiny, but the grapes have an unequalled concentration and complexity. Despite the scorching dry summers, no irrigation is used (a method known as 'dry farming'). The Midnig…

G. & J. Guillerault / Sebastian Fargette

Gilles Guillerault and Sébastien Fargette are based in Crézancy-en-Sancerre, a few kilometres west of Sancerre, in the Centre-Loire region. A lovely hilly landscape where vineyards alternate with charming villages. With around 2400 hectares of vineyards, Sancerre is a rather small wine-growing region. Only two grape varieties are cultivated, Sauvignon Blanc and Pinot Noir.

The well-drained soils are very calcareous with a variable proportion of clay. The flint, mainly found around Sancerre, provides the typical "flinty" aroma to the wines. 1000 kilometres from the Loire estuary, we are in the heart …

Domaine Tollot-Beaut / Nathalie Tollot

This fine family domaine has existed since the end of the 19th century. Initially, there were only a few vineyards in the village of Chorey. As time went on, it developed into 24 hectares in the communes of Beaune, Savigny and Aloxe-Corton. The estate is now run by cousins Nathalie, Jean-Paul, and Olivier Tollot.

On the approximately 30 different plots that are exclusively planted with Pinot Noir and Chardonnay, Jean-Paul and Olivier are very busy using traditional methods: the soil is tilled with a hoe, weeded and naturally everything is harvested …

Champagne Philipponnat

Journeying across Champagne you will inevitably come across familiar sounding names. Grand names behind which often hide grand houses that carry on their business at the global level.

It's a bit different with Charles Philipponnat. His champagne isn't well known to everyone, but it is one of the most exclusive. It was in the 17th century that the Philipponnat family moved to Mareuil-sur-AŸ in the heart of Champagne. In 1…
