A hidden treasure from Puligny-Montrachet
Domaine Thomas-Collardot is a small, family-run winery with 2.5 hectares of vineyards in the heart of Puligny-Montrachet – one of the most renowned wine-growing areas in the Côte de Beaune in Burgundy. Since 2010, Jacqueline Collardot has been running the winery with passion and respect, continuing a precious family tradition.
The vineyards have been in the family for three generations and were managed by Jacqueline's father, Pierre Thomas, until 1992. After years of leasing them to his cousins, Jacqueline took over responsibility – a conscious step back to her roots, which she lives with dedication. In 2015, she launched her first wine, and since 2018, her son Matthieu has been working with her to continue the family history. For Jacqueline and Matthieu, winemaking is more than a profession – it is a legacy that preserves the soul of their vineyards from generation to generation.

The estate's wines are shaped by the unique «climats» of Puligny-Montrachet – distinct vineyard sites, each with its own microclimate, soil, altitude and orientation. In this case, they offer perfect conditions for Chardonnay, the estate's main grape variety. Organic cultivation and respect for the soil and biodiversity form the basis of their work. Every parcel, whether Village or Premier Cru, receives the same attention. The small size of the domaine allows each vine to be closely monitored and individually cared for in order to get the best out of every grape.
During vinification, they rely on natural yeasts and careful, almost loving care of each individual barrel: ‘During alcoholic fermentation, I monitor the temperature, must and development every day – almost like with a newborn baby. I listen, smell, taste and feel.’ You can sense this passion – and it is reflected in every glass of their wines.

Domaine Tollot-Beaut / Nathalie Tollot
This fine family domaine has existed since the end of the 19th century. Initially, there were only a few vineyards in the village of Chorey. As time went on, it developed into 24 hectares in the communes of Beaune, Savigny and Aloxe-Corton. The estate is now run by cousins Nathalie, Jean-Paul, and Olivier Tollot.
Polz
The family vineyard of Erich Polz is situated in an idyllic field in the middle of hilly Southern Styria, about an hour’s drive south of Graz. The business was originally founded in 1912. In the late 1980s, the brothers took over their parents’ vineyard. Christoph Polz, Erich’s son, became the fourth generation to assume the role of winemaker in 2011.
Weingut Nicolussi-Leck
The Kreithof, as the ancestral estate is known, is located near the idyllic Lake Caldaro in South Tyrol (Alto Adige) and has been cultivated by the Nicolussi-Leck family since 1915. Standing guard over it are the medieval ruins of Leuchtenburg Castle, which – like the estate – dates back to the 13th century and was presumably also associated with nearby Laimburg Castle in the Etsch Valley.
